Panettone is a kind of typical Milanese, Italian cake, usually reserved and eaten at Christmas, and is one of the symbols of Milan.


It has a dome shape and its height is usually about 30 cm. It is made from a soft and half-baked dough containing candy and raisins. Panettone is generally cut and served with a sweet hot drink or sweet wine like spumante or moscato.


The most famous cake producers are Motta, Alemagna and Le tre Marie; at the beginning of the 20th century, mentioning the name Motta means calling panettone.

Production techniques have been altered due to the new European regulations on food, because its traditional preparations require that the dough should not be fully cooked and the raisins must be fermented. Therefore panettone flavor is now different from traditional panettone.
