Valençay
is
a blunt pyramid-shaped French cheese made with pasteurized pasteurized milk.
The origin of this cheese is in the southern part of the Loire Valley.
The surface of the Valençay
cheese is sprinkled with black charcoal or with dust. The bluish gray mold
grows on the surface of the cheese. The weight of this cheese ranges from 7 to
9 ounces.
According to legend, this
form of cheese was once a perfect pyramid with a pointed tip. When Napoleon was
defeated in battle in Egypt, he was summoned to Valençay castle. When he saw
Valençay cheese he was reminded of the Egyptian pyramid and then cut off the
tip of the cheese until it was a dull shape.
