Taleggio is a square Italian cheese made with raw cow's milk. This cheese is one of the cheese Stracchino soft and square-shaped cheese from the Lombardy region.

The sides of this cheese have a length of 20 centimeters and the weight of the cheese is about 1 to 2 pounds. The skin of this cheese is thin and reddish in color while the inside is white or yellow straw.

Traditionally this cheese is matured in caves that have deep gaps. The gap produces a natural air that causes the mushrooms to grow on Taleggio cheese. Taleggio cheese is one of the oldest cheeses from the Lombardy region and has been known since the 9th century.
