Bryndza or Brinza or Burduf Brinza is a cheese that comes from Eastern Europe and is produced using raw sheep milk. This cheese comes from the Carpathian region and has existed since Roman times.


This cheese has a soft, moist, creamy and brittle texture. The taste of this cheese is sweet and has an aromatic character. Bryndza cheese is usually eaten within a day or two after making. 


Some of these cheeses are cut into cubes and preserved in salt water for use in winter. The salt-fed Bryndza cheese is similar to Feta cheese. Another cheese that has similarities with Bryndza is the Sirene cheese from Bulgaria.
