ricotta -

Ricotta is fresh Italian cheese made from whey from other cooking cheese making. Ricotta comes from the Latin word "recocta" which means "cooked again". This cheese is produced in all regions of Italy.

Ricotta can be eaten or used in lasagna, cannoli (cakes from Sicily) and other dishes. This cheese has a taste that is not too sweet with a soft texture and white color like snow.
