Pecorino is the name for all kinds of hard textured
cheeses from sheep's milk originating from Italy. Pecorino has many types that
come from certain regions of Italy and are made from certain types of sheep's
milk. The name Pecorino comes from the word pecora which in Italian means
sheep. This cheese has a round shape like a drum.
The skin of
this cheese varies in color, depending on the length of the cheese ripening.
Sometimes this cheese is given a protective layer of pork oil or regular oil.
The inside of this cheese is white to pale yellow with small holes or
"eyes".
