Mofletta
(Hebrew: מופלטה, also Mufleta, Mofleta, Moufleta etc.) is a North African
Jewish pancake usually eaten at the Mimouna celebration, the day after the
Jewish Passover.
Mofletta is a crêpe made
from water, flour and oil. The daest is rolled and cooked in a frying pan until
brownish yellow. The hidanagn is usually eaten at the time only, with smeared
butter, honey, syrup, jam, walnuts, pistachio and dried fruits.
The Mimouna holiday, brought
to Israel by the Jewish community of North Africa, primarily Morocco, is
celebrated just after the Jewish Passover. In the afternoon, fruits, sweets and
pastries are served to neighbors and visitors, and mofletta is one of the
dishes usually served.
