Etorki is
a French cheese made with pasteurized sheep's milk. Cheese Etorki made in the
French Basque region in the Pyrenees. The milk used to make this cheese is the
milk of a black-headed lamb.
Until 1984 most of the
sheep's milk from the Aquitaine area was used to make Roquefort cheese.
However, after Roquefort cheese is certified by AOC, milk from the area is
prohibited from being used again for Roquefort cheese making.
Then a company called
Fromagerie des Chaumes made use of the milk to make Etorki cheese. This cheese
has a bright yellow inner interior and a flexible texture. Meanwhile, the skin
of this cheese is thin and orange in color. Taste of cheese Etorki sweet and
has a high fat content.
