Tilsiter or Tilsit is a semi-hard textured cheese from Germany made with pasteurized cow's milk. The name of this cheese is taken from the name of the city where the cheese was first produced, namely the city of Tilsit on the banks of the River Memel.


This cheese comes from the 19th century when the Dutch people living in Tilsit discovered this cheese by accident. At that time they wanted to make Gouda cheese but some factors make them even make a cheese that is completely different from Gouda.


Tilsiter cheese is often sold in blocks. The color of the cheese is yellow and the surface is slippery with lots of holes. This cheese should be washed and brushed regularly for the first two months until the skin becomes hard.
