São Jorge or Ilha de São Jorge is a cheese from Portugal in the process of making it using raw cow's milk. This cheese comes from the same named island in the Azores Islands.


São Jorge cheese has a large and round shape with a diameter of 20 to 35 centimeters and height between 10 to 15 centimeters. The weight of this cheese ranges from 8 to 12 pounds. The consistency of the São Jorge cheese is dense and has several holes in the inside.



The cheese skin is hard and has an old yellow color and is coated with a paraffin layer. Just like Gouda cheese or Edam cheese, the flavor of the São Jorge cheese grows as the process of maturation takes longer. In addition, this cheese can also last long so that the choice of the sailors who pass through the Azores Islands.
