Pélardon
is
a soft textured cheese from France made with raw goat milk. This cheese has
ivory-colored skin and is covered with white and blue mushrooms.
The fungus is caused by the
old maturation process. When this cheese is young, this cheese has a soft texture
while after being matured for a long time this cheese becomes brittle. The
shape of this cheese is round with a diameter of 5 to 8 centimeters and a
height of 2.5 centimeters.
Meanwhile, the weight of
this cheese is only 2 ounces. Pélardon cheese is still being considered for
certification by the AOC. Other similar cheeses are Pélardon des Cevennes,
Pélardon d'Altiéres and Pélardon des Corbiéres.
