Oyster sauce (Hanzi: 蚝油 pinyin: háo yóu) is a rather blackish blackish sauce in Chinese cuisine made from oyster and has a savory and salty taste.

High-quality oyster sauce made from oysters cooked until thickened with no salt, monosodium glutamate (vetsin) and no preservatives. There are also oyster sauce that still contains small pieces of oyster meat.

The high-quality oyster sauce is unpalatable and expensive so the oyster sauce is not to be consumed by the masses. It is made from a little bit of watery oyster broth plus thickening flour, sugar caramel and monosodium glutamate.
