Livarot is a cheese from the Pays d'Auge area in Normandy, France made with pasteurized cow's milk. This cheese can only be produced in the departments of Calvados and Orne.


Livarot has a slightly reddish-colored skin and creamy inner color. The shape of this cheese is a cylinder with a height of about 5 centimeters while the texture is smooth and soft. Livarot cheese weighs between 1.5 to 1 pound.


The cheese is sold in four different diameter sizes, which are 5 inches, 4 inches, 3.5 inches, and 3 inches. Livarot is often called "Colonel" because of the five lines on this cheese edge.
