Gammelost or Gamalost is a blue cheese from Norway and uses raw goat milk. The name of this cheese has the meaning of "old cheese" because the skin of this cheese is overgrown by a brownish-green fungus so the Gammelost cheese looks old.


In order for mushrooms on this cheese to develop well then this cheese is traditionally wrapped with gin-soaked straw and juniper berry. The cheese is very sharp and aromatic. The color of the cheese is brownish yellow and there are irregular blue shades.


The shape of the Gammelost cheese is generally like a drum. When the cheese is still young, the texture is quite soft but after this cheese matured into hard texture. This cheese has a low fat content and is suitable to be served after dinner with aquavit or gin.
