Appenzeller or Appenzell is a cheese that comes from the Appenzell region of Switzerland and is made using raw cow's milk. Although originally from Appenzel, this cheese has been produced also in St. Gallen and Thurgau. Milk used to make this cheese comes from cows that are fed straw.


This cheese has a round shape and yellow. Appenzeller cheese has a solid texture and is quite hard. On the inside of this cheese there are small holes no more than peanuts.


The skin part of this cheese is colored between pale yellow to orange. The color is obtained because the cheese is soaked in herbs spices, white wine and salt. Appenzeller cheese through the maturation process for at least three to four months.
