Rennet is
a group of enzymes produced by the stomach of feeding animals to digest
mother's milk. Rennet contains proteolytic enzymes (proteases) that separate
milk into solid and liquid parts. The active enzyme in rennet is called rennin
or chymosin (EC 3.4.23.4), but rennet also contains several other important
enzymes such as pepsin or lipase. The use of rennet is to make cheese and
junket.
