Lancashire is
a cheese from the Lancashire area of England made with pasteurized cow's milk.
During the industrial revolution, Lancashire cheese was the main food for
factory workers. The factory-made Lancashire cheese was first produced in 1913.
When young, this cheese is
full of cream, so called Creamy Lancashire while the cheese that has been
matured dubbed Tasty Lancashire. This cheese has a hard texture and is produced
slowly to increase its lactic acid level and remove the sour taste in the
cheese.
This cheese moisture is
higher than Cheddar cheese and therefore does not require a long time to
matured. The Lancashire creamy cheese is cooked for 8 to 12 weeks while the
Lancashire tasty cheese.
