Coolea is a cheese from an Irish country that has a hard texture and is made using raw cow's milk. Coolea cheese is made by Dick Willems and Sinead Willems who are both immigrants from the Netherlands. Cheese is made by following the process of making Gouda cheese. Coolea cheese matured for 6 to 12 months.

Sometimes the Willems family makes bigger cheeses that can be matured for up to two years. After being matured during that time, the color of the cheese turns darker and the tiny holes in it become damp.

The cheese is produced from cow's milk full of cream and nothing is excreted or added. This cheese has won several awards, including "Best Modern English Cheese" and "Best Irish Cheese" at the "British Cheese Awards" in 2007.
