Azeitão is a cheese from Portugal made with raw sheep milk. This cheese comes from Setúbal in southern Lisbon and is named by the same named village. Azeitão cheese is a round and small cheese with a diameter of 1 to 2.5 centimeters and a height of 4 to 5 centimeters.

Meanwhile, the weight of the cheese is 3.5 to 9 ounces. This cheese has a white to pale yellow color while the skin is orange reddish. Azeitão cheese has a sharp aroma and soft texture, thick and smooth.

To make Azeitão cheese raw sheep milk thickened first then water dadihnnya allowed to dry. Then salt is added to the curd and cheese is stored for 20 days in a room with a humidity level of 85 to 90%.
