Amba
(Arabic: عمبة, Hebrew: עמבה) is an acidic mango spice popular in Middle Eastern
cuisine (mainly Iraqi, Indian and Israeli cuisine). Its name comes from
Sanskrit for mango.
The spice is usually made
from mango, vinegar, salt, mustard, turmeric, chili and fenugreek, similar to
mango chutney.
The name "amba"
comes from the Sanskrit word "amra", and the mango comes from India.
