Budae
jjigae (literally: military base soup) is a Korean dish made
from soups cooked with ham and canned meat.
This cuisine began at the
end of the Korean War when people lacked food. At that time the people living
in Uijeongbu, Gyeonggi province, took advantage of excess food from US military
bases in the form of canned meat and ham.
They combine these
ingredients with Korean sauce with spicy gochujang spices and boil them in a
large pan. Over time this new simple and easy-to-make cuisine became famous and
often associated with the city of Uijeongbu so it is also called uijeongbu
jjigae.
At present jjigae budae
cuisine is very popular in South Korea. Many restaurants serve this dish with
new variations by adding vegetable ingredients, mushrooms, ramyeon instant
noodles, tteok, kimchi, macaroni, cheese and so on.
