Kimchi is a traditional Korean food, one type of pickled vegetables fermented with spicy seasoning. After salted and washed, the vegetables are mixed with herbs made from krill shrimp, fish sauce, garlic, ginger and red chili powder.

The most common vegetables made kimchi are chicory and radish. In ancient times, kimchi was pronounced as chim-chae (Hangul: 침채; Hanja: ) meaning "vegetables soaked."

In Korea, kimchi is always served at mealtimes as one of the most common banchan types. Kimchi is also used as a spice while cooking kimchi soup (kimchi jjigae), kimchi fried rice (kimchi bokkeumbap), and various other dishes.
