Surimi ( ), or more of crushed meat, is a food ingredient of a smoothed fish to a paste-like shape. This material is usually packed in a frozen state, to be melted and processed into finished food.

With its flexible and neutral nature, surimi may become a variety of imitation of seafood. Because it is made of large quantities, crabs that can be made from surimi can be a cheaper alternative to lobsters or native crabs.
