surströmming -

Surströmming, is a typical national food from Sweden made from Baltic herring. This fish is fermented so it has a very strong odor, so few people can enjoy it. Surströmming is fermented by the lactic acid enzyme present in the spine of the fish itself, assisted by bacteria. Hydrogen sulphide is also produced in this process, adding the resulting odor.
