Salmon is commonly smoked to make lox, and some fish species such as milkfish, herring, mackerel, tuna, mackerel, and cork are also commonly smoked hot. Smoked fish are found in Russian, Jewish, Indonesian, and Scandinavian cuisine, as are Eastern and Central Europe.
