sauerbraten -

Sauerbraten (grilled sour meat) is a traditional German meal of processed roasted meat that is often served in winter. Every region in Germany has its own characteristics so that the recipe sauerbraten varies from one region to another.

But basically sauerbraten is roasted meat in vinegar mixed with spices then boiled with a little water in a covered pan and served with sauce, red cabbage, boiled potatoes or en: Knödel (a kind of dumpling made from potatoes).

Initially, sauerbraten is made by using cheap meat (making it more tough). That is why the secret of making sauerbraten is to soak the meat for several days before cooking.
