The name khiao (green) comes
from the color of this dish, which is obtained from green chili. The term wan
(sweet) does not refer to sweetness, but rather refers to a kind of
yellowish-green color. Because the Thai Curry is made from coconut milk and
green chili, the resulting color is a bright green which in Thai is called
"sweet green". The spices do not have to be steady and may vary. The
taste of this green curry is not necessarily sweet, but it tastes usually more
spicy than red curry.
