gimjang -

Gimjang (김장), also spelled kimjang, is a traditional process of preparation and preservation of kimchi, a spicy Korean pickled vegetable dish, in winter. During the summer months, Kimchi was made instantly, from seasonal vegetables at the time. For a month, from the tenth month of the year, people start preparing large amounts of kimchi, to provide nutrition throughout the winter.

Gimjang is incorporated into the UNESCO Culture Heritage Intelligence List of UNESCO's Decade of Representatives in December 2013.
