Cheesecake (Indonesian: " kue keju ") is a cake that is usually eaten as a dessert and is made by mixing soft-textured cheeses, eggs, milk, and sugar.

Cheese commonly used to make cheesecake is cream cheese, but can also be used other cheese such as cottage cheese, ricotta, mascarpone, neufchâtel or quark cheese. Cheesecakes are generally decorated with fresh fruit, cream and icing.

The bottom of the cheesecake can be filled with graham crackers, crushed nuts, or other fragile textured ingredients. Although called a cake or a sponge, cheesecake is not a kind of sponge cake but can be categorized as a pie or custard is a mixture of eggs and milk baked or cooked with hot water and become thick due to the egg protein coagulation process.

Cheesecake can be roasted or not baked. Cheesecakes that use eggs are generally baked to ripen the eggs.

Meanwhile, gelatin is used for cheesecake that is not baked. Whether baked or not, the cheesecake should be stored in the refrigerator before serving.
