Cassata or
Cassata siciliana is a traditional sweet food from the region of Palermo and
Messina, Sicily, Italy. Cassata also refers to Neapolitan ice cream containing
peanuts or dried fruit or made sweets.
Cassata consists of a round
sponge cake mixed with fruit juice or liqueur and combined with ricotta cheese,
candied fruit, and chocolate or vanilla stuffing similar to cannoli cream. The
food is decorated with marzipan, pink and green pastel icing, and decorative
designs. The top of the cassata is decorated with candied fruit that depicts
the characteristic cuts of citrus fruit from Sicily.
