Zeeuwse bolus (Dutch pronunciation: [zeːusə boːlɵs]) or Zeeuwse bolusen is a Jewish cake made from the Dutch province of Zeeland. They are made by baking dough white bread rolled with dark brown sugar in the form of a spiral, lemon rind (rare and only in some areas), and cinnamon. The bolus shape can be different among bakers. They are often enjoyed with coffee, and in some parts like the bottom of a flat bolus usually smeared with butter.

There are also other types of cakes sold under the name Bolus or boles in the Netherlands. This is a ginger bolus, made from a dough filled with ginger and orange syrup filled with citrus fruits and almonds giving a distinctive flavour of oranges and almonds to the bolus. This bolus is golden yellow and sheets are paper-like. They should be eaten with a spoon because of the syrup material that makes them become very sticky.
