Siumei is a common term found in Cantonese Cuisine that refers to a wide variety of roasted meat using rotisserie oven, either with open flame or woody coals. 

This roasting method provides a strong aroma and taste of barbecue, and usually before baking, the meat is smeared with tasty sauces (different sauces for each type of meat). Siumei is very popular in Hong Kong and Macau.
