Ontbijtkoek or "breakfast
cake", but commonly called the spice bread from the Netherlands. Black
wheat is the most important ingredient as a light brown dye. Often seasoned
with cloves, cinnamon, ginger, and nutmeg.
Some parts of the Netherlands have their
own local recipes, most notably the "Oudewijvenkoek") which are
mostly eaten in the north, and seasoned with anise. Ontbijtkoek was originally
served at breakfast with a thick layer of butter on it, instead of bread.
Because sweet, this cake can also be a snack.
Ontbijtkoek not baked in the house
traditionally, but it is produced commercially.
